• 2 cups all purpose flour
  • ¼ cup granulated sugar
  • 2 teaspoons baking powder
  • ⅛ teaspoon salt
  •  cup unsalted butter, chilled
  • ½ cup half and half
  • 1 large egg
  • 1¼ teaspoon vanilla extract
  • 1 teaspoon lemon zest
  • 3 teaspoons grated fresh ginger
  • Juice of one lemon (reserve 2 teaspoons for glaze)

Lemon Glaze

  • 1 cup confectioners’ sugar
  • 2 tablespoons water
  • 2 teaspoon (reserved) lemon juice


  1. Preheat oven to 375 degrees F.
  2. In a large bowl, stir together the flour, sugar, baking powder, and salt.
  3. Cut the butter into ½ inch cubes and distribute over the flour mixture.
  4. With a pastry blender or two knives, cut in the butter until the mixture resembles coarse crumbs (a KitchenAid mixture with a paddle can also be used).
  5. In a small bowl, stir together the half and half, egg, vanilla, lemon zest, lemon juice, and ginger. Add the wet mixture to the dry mixture and mix gently until combined.
  6. Use a small 2 to 3 ounces ice cream scoop to place dough on a parchment-lined baking sheet.
  7. Bake for 12 to 15 minutes or until lightly browned. Remove the baking sheet to a wire rack and cool. If desired, finish with lemon glaze.

Lemon Glaze

Mix confectioners’ sugar, water, and lemon juice in a bowl.
Drizzle on the scones.

Makes: 9 to 12 scones
